Elegant body with a clean, round acidity. Distinct notes of citrus and floral aroma, specifically bergamot and sweet lemon peel. Long, pleasing finish.
The Region
Ethiopia Yirgacheffe is a classic example of an East African Coffee. From the Oromia Coffee Growers Cooperative, this Yirgacheffe is found in the Sidamo region of Ethiopia- the birthplace of coffee. The coffee that grows naturally here was the beginning of coffee, as we know it. With time, the beans found their way to the Yemen port of Mocca where merchants and traders first tasted coffee. It can be argued that all fine coffee cultivars can be traced to their beginnings in Ethiopia.
The Coffee
For years, Yirgacheffe was little known in specialty coffee circles; all the glory was paid to Harrar and Sidamo. But as the practice and quality control for washed processes improved, so did Yirgacheffe’s notoriety. Increasingly, it was separated as extraordinary coffee. More washing stations popped up in the region as demand grew for Yirgacheffe.
The cooperative structure not only regulates the quality of processing, but it focuses the needs of the producers and guarantees sustainability on all fronts. This Yirgacheffe is certified organic. No chemical pesticides or fertilizers are used and these practices are completely traceable through certification.
